Almond Butter Energy Bites | Recipe

After a busy weekend and an early start to my Monday, I needed a little energy boost. These energy bites are perfect for that afternoon ‘slump,’ and if you are anything like me they will also satisfy that afternoon sweet tooth. Give this recipe a try and get energized! These nutritious little bites are the perfect fibre filled snack.

Almond Butter Energy Bites

Makes 10-12 energy bites (more or less depending on your rolling technique).

Ingredients:

8-10 Medjool dates, pitted

1/2 cup rolled oats

1/4 cup shredded coconut

2 heaping tbsps. almond butter

1/3 cup dark chocolate chips (optional)

Directions:

Blend everything together in food processor. You may need to separate the dates if any clumping happens. The mixture will look somewhat dry, but don’t worry.

Mix in dark chocolate chips.

Take about 1-2 tablespoons worth and roll into small balls.

Place balls on parchment lined tray and refrigerate for 30 minutes before enjoying.

Side note: I keep mine in the fridge for 4-5 days.

Sugar Tips:

1) Try to satisfy your sweet tooth with small amounts of natural sugar sources (e.g., 1 fruit and 1 tbsp. nut butter, 1/4 cup trail mix, 2 energy bites – see recipe, 1/2 cup frozen grapes etc.)

2) When selecting a sweet snack (e.g. flavoured yogurts, granola bars, cereals etc.) keep the sugar below 10 grams per serving (look at the nutrition table). In addition, aim to have only 2 of these items in your day. This will help ensure you are not over eating sugar throughout your day.

3) Plan ahead. Have healthy meals and snacks available when you get hungry to help reduce your sugar cravings.
